Keto Spicy Shrimp Avocado Salad

YUM, this Spicy Shrimp Avocado Salad is a MUST-TRY!

I see a lot of questions from Keto beginners requesting ideas about how to get more avocado in their diets.  This Spicy Shrimp Avocado Salad recipe is the perfect solution to all of you looking to eat more healthy fats.

This meal is also a great Keto fix when you’re craving sushi without the carbs.  You won’t miss the rice at all with this Spicy Shrimp Stuffed Avocado.

Our recipe takes your basic avocado and stuffs it with delicious shrimp tossed in a spicy mayo dressing and topped off with a few flakes of seaweed .  Alternatively you can also take a few sheets of roasted seaweed (available HERE on Amazon) and scoop out the avocado/shrimp onto the sheets to eat them like wraps.

You can prepare this as either a lunch or dinner, and it’s likely something you’ll go back to regularly as it’s super quick to make, doesn’t require a ton of ingredients, and is extremely satisfying to the taste buds!

Here’s what you’ll need (per serving):

  • 1 large avocado 
  • 1/4 pound of shrimp
  • 1-2 sheets of Roasted Seaweed

Makes 2 servings of spicy mayo sauce (divide or multiple as needed):

  • 3 Tablespoons Mayo
  • 2 Tablespoon of Sriracha Sauce
  • 1/2 Teaspoon Garlic Powder
  • 1/8 Teaspoon of Salt
  • 1 Tbsp. Lemon Juice

Ingredients
  • Per serving:
  • 1 large avocado
  • 1/4 lb of shrimp
  • A couple sheets of Roasted Seaweed
  • Makes 2 servings of spicy mayo sauce (divide or multiple as needed):
  • 3 Tablespoons Mayo
  • 2 Tablespoon of Sriracha Sauce
  • 1 Tbsp. Lemon Juice
  • 1/2 Teaspoon Garlic Powder
  • 1/8 Tsp. of Salt
Directions
  • Step 1 Thaw/ peel / de-vein your shrimp and remove the tails.
  • Step 2 Add a pinch of salt to a medium sized pot and bring water to a boil.
  • Step 3 Add shrimp then cook for 1-2 minutes, until shrimp is pink and opaque.
  • Step 4 Drain shrimp and allow to cool for about 15 minutes. Then chop them up roughly into small 1/2 inch pieces.
  • Step 5 Prep your spicy mayo sauce by combining mayonnaise, sriracha, lemon juice, garlic powder, and salt and stir until evenly blended. Set aside.
  • Step 6 Cut your avocado in half and remove the seed. Then scoop out some (but not all!) of the filling to make additional room for your shrimp.
  • Step 7 Combine your cooled shrimp with your spicy mayo sauce. Then scoop the spicy shrimp mix to fill your avocado halves.
  • Step 8 Cut up a few slices of roasted seaweed and sprinkle on top (optional).
